So teaming up with Cobram Estate in Victoria they realized they could use olive oil as a botanical, alongside dried Olive Leaf. To amp up the savoury aspects, rosemary and bay leaf are also used. The results are a herbaceous gin with hints of bay and rosemary up front, earthy juniper, softly vegetal richness of
